2017 – THE YEAR OF THE AUBERGINE

For the Italian chef the aubergine has been on their radar for a lot longer.Typically known as the Italian eggplant or Melanzana, the fruit (yes, it’s not a vegetable!) is traditionally renowned for its size, shape and colouring. With interesting textures and an abundance of flavour – it’s not surprising that Italians regularly use this popular ingredient within dishes.To native Italians, melanzana was derived from the term ‘mela insana’, meaning mad apple. It was once believed that too much aubergine caused insanity. However we don’t believe that too much aubergine could ever be a bad thing – do you?!

The hearty ingredient can be fried, grilled or baked, whilst many choose to stuff, roast, puree or stew it. Due to its spongy texture, the Italian eggplant absorbs accompanying flavours with ease, making it the perfect cooking partner.
