2017 – THE YEAR OF THE AUBERGINE
Wave goodbye to the avocado and say hello to the aubergine!
2016 saw a surge in the number of people all across the world going nuts for the funny-shaped fruit. For the Italian chef the aubergine has been on their radar for a lot longer.
Typically known as the Italian eggplant or Melanzana, the fruit (yes, it’s not a vegetable!) is traditionally renowned for its size, shape and colouring. With interesting textures and an abundance of flavour – it’s not surprising that Italians regularly use this popular ingredient within dishes.
To native Italians, melanzana was derived from the term ‘mela insana’, meaning mad apple. It was once believed that too much aubergine caused insanity. However we don’t believe that too much aubergine could ever be a bad thing – do you?!
The hearty ingredient can be fried, grilled or baked, whilst many choose to stuff, roast, puree or stew it. Due to its spongy texture, the Italian eggplant absorbs accompanying flavours with ease, making it the perfect cooking partner.
What’s more, the aubergine caters to all foodie types. Whether you’re a vegetarian looking for a meat replacement, or a meat-lover looking for a side of something healthy and tasty – the aubergine is always there as an option to satisfy your craving.

1. Melanzana Alla Parmigiana
Looking for something delicious to start your meal? Our melanzana alla parmigiana is our recommended go-to where you can also source one of your 5-a-day. The classic northern Italian recipe is easy to replicate, so you can even take it home with you. Layer your aubergines up with pecorino cheese, tomato, basil and mozzarella and put them in the oven to bake. Simple, but tasty!
2. Rigatoni Al Forno
For a rich, moreish main course, opt for our Rigatoni al forno, a parcel of pasta and aubergine covered in a cherry tomato sauce and topped with melted pecorino cheese. The ultimate Italian comfort food which will warm you through to the core! To spice up this dish even more, add your own chilli flakes – but be careful not to overdo it and ruin those nostalgic flavours.
